WHY WE MADE THIS CHANGE?

The transformation started
with our daughter

Last September our daughter Lili was diagnosed with coeliac disease.

Overnight, eating out changed completely.

Restaurant visits became planning exercises. Family trips became research projects. Spontaneous meals disappeared.

Like many families living with coeliac disease, we made a decision: We turned our whole household gluten free.

Before this, Lili loved spending time at our restaurant — back then Bontxo, now Saboré. That suddenly stopped.

Over the following months we learned what every coeliac family already knows:

Finding food is not difficult.

Finding places where you can relax is.

So eventually we asked ourselves a simple question:

If this changed our lives so much — why not change the restaurant too?
